OUR OIL

The Harvest

Our harvest takes place during the waning moon, when the plant’s vital sap is at its lowest — minimizing any possibly stress and preserving its inner vitality. We use the most delicate equipment, precision mechanical combs designed to touch only the fruit, avoiding any vibration or disturbance to the tree. The olives are collected at the beginning of ripening (invaiatura), when they are still green — just as the ancient Romans produced their “oleum ex albis ulivis”, the most prized oil of antiquity. Within six hours of harvest, the olives are cold-pressed at a controlled temperature never exceeding 23°C, preserving the olives’ natural virtues — their freshness, aroma, and nutritional value.

The Result

The result is a superior quality, genuine, non-filtered, organic, extra virgin olive oil of unmatched purity and balance. Producing an oil with acidity around 0.3%, exceptionally high polyphenols, and a very low peroxide index, it reveals an intense yet soft taste — smooth, gently spicy, with notes of fresh herbs and green fruit. Its natural integrity  is uncompromised — free from any chemical residues. Each drop is a living essence of our land — unfiltered, pure, and full of life. Each bottle is individually hand-sealed, accompanied by certified organic documentation and a full laboratory analysis. Our oil is not simply a product — it is a story of respect, craftsmanship, devotion, sacrifice, patience, and truth — of a family that has chosen to protect what is sacred: the harmony between man and the earth.
